The Best Chicken Parmesan Recipe: Chick Parm Supreme | Tito’s Kitchen Episode 1

In episode 1 of Tito’s Kitchen, Tito cooks up the best chicken parmesan recipe.

Ingredients:

Breading

2 chicken breasts

1 cup of flour (add salt and pepper to taste)

3 eggs

2 oz olive oil (for sautéing)

Bruschetta:

3 roma tomatoes

½ red onion

2 garlic cloves

½ tsp salt

¼ tsp pepper

1 tbsp olive oil

Sauce:

24 oz. of marinara sauce

½ tbsp of sugar

Prosciutto:

2 slices

Cheese:

2 slices of mozzarella cheese

4 oz of parmesan cheese

Steps:

Pounding the chicken

The chicken breast is usually thick on one end and thinner on the other. So we are going to pound the chicken to make sure itl cooks evenly.

People do this in different ways. Me I just put it in a zip lock bag with about a teaspoon of olive oil (to prevent tearing). And I use a small pan to pound the chicken. Like I said, people do this in different ways. So you can use your tool of choice.

Once we’re done pounding the chicken, I’m gonna sprinkle both sides with a little salt and pepper.

Breading:

Now it’s time to set up your breading station:

1 cup of flour (with salt and pepper to taste)

3 eggs for your egg wash

Panko breadcrumbs

In three separate bowls

First, you’re going to put the chicken breast in the flour and coat both sides. Next, gently shake off the excess flour and place it in the bowl with the egg wash After that place the chicken in the bowl with the breadcrumbs and coat both sides again.

Preheat Oven to 450°

At this point we are going to preheat the oven to 450° and we’re also gonna get our marinara sauce heated up in a pot. You can use whatever marinara sauce you want. Mix in a ½ tbsp of sugar and let simmer.

Bruschetta

Combine in one bowl the diced tomatoes, onions, chopped garlic and basil. Then add in your salt, pepper and olive oil. Mix them well together and set aside to let that flavor soak in.

Cooking the Chicken

Ok time to cook the chicken. For this part, you can use a saute pan or cast iron or whatever you have at home to heat up 2 oz of olive oil. Cook the chicken for about 2 minutes on both sides. (Keep in mind the chicken will not be fully cooked yet. We will finish it in the oven.)

Ok this is where all the magic happens!

Building the Chicken

First place a liberal amount of marinara sauce on top of the chicken Then add a slice of prosciutto ham on top of the sauce. Next place a slice of mozzarella cheese on top. After that we are going to dress it with the Fresh Bruschetta (This really kicks the flavor up to the next bracket.) Finally sprinkle the parmesan cheese on top of everything.

Finish in the oven

Place your masterpiece on a tray and put it in the oven for about 10 minutes. This will give the chicken a chance to finish cooking, the prosciutto edges a chance to crisp, and time for the cheese to melt.

Plating

Place a nice amount of marinara sauce in the center of the plate. Then place the chic parm right on top. Mmmmmh that looks good!

Instead of pasta, I’m going to plate this delicious goodness with a side of Caesar salad and some garlic bread.
